Utensils for the Kitchen

These fries require just a few essential pieces of kitchen equipment:

1. Mixing Bowls: Essential for marinating the bulgogi and preparing the gochujang aioli.
2. Food Processor or Blender: Necessary for pureeing the Asian pear and yellow onion to achieve the desired consistency.
3. Baking Sheet Pan: A single half-sheet baking pan is sufficient for baking the fries and melting the cheese topping.

Ingredients

For Sriracha Aioli

  • 1/2 cup sriracha sauce
  • 1/2 cup mayonnaise

For Bulgogi

  • 1/2 small white onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 16 ounces flatiron steak, thinly sliced
  • 1 cup kimchi, choppe

For Fries

  • 3 russet potatoes
  • 8 cups canola oil (for frying)
  • Salt and pepper to taste

For Assembly

  • Sliced scallions
  • Black and white sesame seeds

Directions

For the Sriracha Aioli

  • Mix the sriracha and mayonnaise together and keep in a squeeze bottle for later.

For the Bulgogi

  • Combine onion, garlic, black pepper, sesame oil, rice vinegar, honey, soy sauce, and steak in a container. Let it marinate in the fridge for at least 12 hours or up to 24 hours.
  • When ready to cook, heat a pan over medium-high heat. Add the marinated steak and kimchi. Cook, stirring often, until the steak is done and the kimchi is warm, about 5 to 7 minutes.

For the Fries

  • Cut the potatoes into thin fries and soak them in water for 30 minutes.
  • Heat the canola oil in a deep fryer or heavy saucepan to 325°F.
  • Blanch the fries in batches until they’re pale but still soft, about 3 minutes. Let them cool. Then, heat the oil to 350°F and fry the blanched fries until they’re light golden brown, about 3 more minutes. Season with salt and pepper.

For Assembly

  • Start by placing the fries on a serving dish. Top them with the cooked bulgogi and kimchi mixture.
  • Garnish with sliced scallions, the sriracha aioli, and black and white sesame seed
