Instructions

Preparing the Dosa Batter

  • Blend Suji: In a blender or mixie jar, take 1 cup of suji (semolina) and blend it until it becomes a fine powder, resembling flour.
  • Mix Ingredients: Transfer the ground suji to a bowl. Add 2-3 tablespoons of all-purpose flour, 1 cup of curd (yogurt), and 1 cup of water. Blend or whisk until you achieve a smooth batter.
  • Add Salt: Stir in 1 teaspoon of salt and mix well. Let the batter rest for about 10-15 minutes, allowing the suji to absorb the water and thicken the batter.

Making the Dosa Filling

  • Heat Ghee: In a pan, heat 3 tbsp of ghee.
  • Add Dal and Cumin: Add 1 tbsp of gram dal, 1 tbsp of Urdah dal, and 1 tbsp of cumin seeds. Fry until they start to turn golden.

  • Prepare Tadka: In a separate pan, heat 4 tbsp of oil, add 1 tbsp of jaggery dal, 4-5 whole red chillies, and 5-6 curry leaves. Fry for 2 minutes and pour this over the chutney.
