Ingredients for Cheesy Crispy Moong Dal Breakfast

Main Ingredients:

  • 500 grams of potatoes
  • 1 cup of moong dal (peeled or whole)
  • 7-8 curry leaves
  • 1 inch piece of ginger, grated
  • 2 tablespoons of oil
  • 1 cup of semolina (sooji)
  • 2 teaspoons of yogurt (or lemon juice)
  • 1 teaspoon of salt
  • 1 teaspoon of sweet soda
  • 2 tablespoons of green coriander, chopped

For Tadka:

  • 2 cups of ghee
  • 3-4 green chilies, chopped
  • 1 teaspoon of Kalonji (nigella seeds)
  • 1 teaspoon of mustard seeds
  • 3 teaspoons of coriander powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of red chili powder

Instructions

Prepare the Potatoes and Dal

    • Wash and dry the potatoes using a cotton cloth.
    • Wash the moong dal thoroughly and dry it on a cotton cloth.
    • Transfer the dried dal to a mixer jar and grind it coarsely.
    • Soak the ground dal in hot water for about 5 minutes.

Mix the Ingredients

    • In a large bowl, combine the softened dal, curry leaves, grated ginger, and salt.
    • Add 2 tablespoons of oil, semolina, and yogurt (or lemon juice).
    • Mix well to combine all the ingredients.
    • Ensure the mixture is not too watery; adjust the water ratio if necessary.
    • Add chopped green coriander and mix well.

 

Prepare the Balls

  • Add a pinch of sweet soda to the mixture and mix well.
  • Grease your hands with a little oil.
  • Take small portions of the mixture and shape them into small balls.
  • Give the balls a ring-like shape.

Steam the Balls

    • Place a steamer or a large pot with a strainer inside over medium heat.
    • Add water to the pot but ensure it does not touch the strainer.
    • Place the shaped balls on the strainer and cover with a lid.
    • Steam for 10-15 minutes until the balls are cooked and firm.

 

Prepare the Tadka

  • Warm 2 cups of clarified butter in a skillet over medium heat.
  • Add diced jalapenos, Nigella seeds, and fenugreek seeds to the skillet.
  • Sear the mixture until the fenugreek seeds start to pop.
  • Add cilantro powder, caraway powder, and cayenne powder to the skillet.
  • Simmer for a few minutes until the seasonings are thoroughly mixed.

Combine and Cook

  • Add the steamed moong dal balls to the tadka mixture.
  • Gently mix to coat the balls with the tadka.
  • Cook for an additional 5 minutes to allow the flavors to blend.

Serve

  • Transfer the crispy moong dal breakfast bites to a serving plate.
  • Garnish with additional chopped coriander if desired.
  • Serve hot with your favorite chutney or dip.
